TWICE BAKED ACORN SQUASH TV

I spent the weekend in pajamas catching up with my TV shows, wishing I had a fireplace, or a warm body close by, finally unpacking from my trip to Seattle and doing 3 loads of laundry. Tanner ate most of mine, so I’m about to go make another one. So much easier.Īnyways, I hope you enjoy this recipe as much as I did. Place squash cut side down on baking sheet. Brush flesh of squash with olive oil and season with salt and black pepper. Using a spoon, scoop out the seeds and strings inside the squash. Spread butter and sprinkling of salt and nutmeg on the inside of the squash. Wash your butternut squash thoroughly then cut it in half length-wise. Place cut sides up in deep baking dish or roasting pan.

Remove seeds and pulp with a metal spoon, but do not peel. So if you don’t take photos of your everything you eat, like I do, just do it in the damn skillet. Wash squash, carefully cut into halves from tip to stem. Get the recipes Lentil-Stuffed Acorn Squash Twice-Baked Squash Casserole with Pecan Crunch Pumpkin Skillet Cornbread with Honey Butter Pumpkin-Lentil Stew. I baked the casserole in a casserole dish, but afterwards I realized that I could have saved myself the dish by cooking it all in the cast iron skillet. That was a huge factor in why I chose to make a squash dish.

So why not recreate it and go full out breakfast?! Sharon’s recipe was savory and as much as I loved it with the other Thanksgiving dinner foods, I couldn’t stop thinking about it as a breakfast food. I think my cousin’s ratio was something like 1 cup of sugar for every sweet potato and the topping alone had a glycemic index of 4,000. But it was a lovely replacement for the sweet potato “casserole” my cousin used to make. Hers might have had Italian sausage or plain ground pork – not sure. My (almost) sister in-law, Sharon made something very similar on Thanksgiving and it was one of my favorite dishes of the day.

Three things led to the creation of this recipe. You really can’t go wrong with acorn squash, pork, or twice baking.
